This full-bodied soup is full of flavour from the natural sweetness of pumpkin or butternut squash (your choice, or both!) As mummies ourselves, we’re fans of how this is relatively easy to prep, with very little stove time so you can keep an eye on the kids. 

This recipe is easy to make and easy to love, with nutritious ingredients! Pumpkin and Butternut Squash (a type of winter squash) are rich in yellow and orange pigments, which make them rich in beta-carotene. 

Feel free to add in carrots and garnish with parsley. For a spicy kick, sprinkle over some paprika or chilli powder. 

Mom tip!

Share with your kids why it’s important to “eat the rainbow”. We need to eat foods of various colours because they contribute in different ways to our body functions. 

Orange foods:-

  • Improve immune function
  • Reduce the risk of heart disease
  • Are full of vitamin A! That improves our eye health 

Yellow foods:-

  • Have Vitamin C, which boosts skin health and helps us heal
  • Improves immune function
